Kappo Yoshiba Sumo Restaurant, Tokyo


 
What is life after sumo? 
Many retired sumo wrestlers lose weight, become chefs
and open restaurants specializing in chakonabe.
Chakonabe also known as Sumo Wrestler's Stew 
is a Japanese one-pot dish that is commonly eaten by sumo wrestlers
as part of their weight-gain diet.
   There is no fixed recipe to it and 
often the ingredients depends on what is available to cook.


  

Ryogoku, known as Sumo Town is an area in Tokyo 
where anything sumo related (sumo stadium, sumo stables
and chanko restaurants) can be found. 
 
This chanko restaurant used to be a sumo stable
which makes it quite unique because there is a wrestling ring (dohyō)
in the middle of the restaurant.
Guests can also have photos taken posing as sumo wrestlers inside the ring.


 
The restaurant is said to be operated by a wholesale company in the Tsukiji Market 
hence the dishes are made with the freshest seafood daily.


 


Yoshiba's Chankonabe Hot Pot with tasty Miso
Available in four types of soup, Soy Sauce, Salt, Miso and Spicy Miso.


 
This healthy and nutritious Chankonabe is balanced with seventeen ingredients 
like prawns, scallops, other seafood, pork, chicken and vegetables.  
It is to energize your body in the hot Summer days and
warm your body in the cold Winter days.


 
With chicken stock as a base, they blended in Inaka Miso (dark miso from the Kanto area)
and Saikyo Miso (sweet and light miso from Kansai area) in Yoshiba's own formula,
to present a miso that is sweet and mild. This recipe has been traditionally passed down 
since it first opened.


Tartare of Scallops
Surface grilled scallops with ponzu (yuzu citrus and vinegar)
and red pepper grated daikon
Goodness me! This dish is wow!

Grilled Conger Eel
Fresh conger eel grilled ever so slowly with white soy sauce and sake



Crisp Salad with Tuna and Octopus
It is an Italian inspired salad drizzled with olive oil
